Black Bean Quinoa Stir-fry (vegan, Gluten-free)

- 1 cup uncooked quinoa shopping list
- ½ cup onions, diced shopping list
- ½ cup black beans, rinsed shopping list
- 2 cloves garlic, minced shopping list
- 1 Tbsp fresh cilantro, chopped shopping list
- ½ avocado, mashed shopping list
- 2 Tbsp pickled or fresh jalapeños, chopped shopping list
- If you don't have taco seasoning, use adobo, chili powder, cumin, and red pepper flakes to taste. I don't cook with salt or black pepper but you can if you'd like. shopping list
- Juice of 1 lime shopping list
- 2 Tbsps Olive oil, separated shopping list
- Optional: yogurt or sour cream, shredded cheese, parmesan cheese, corn tortillas, whatever else you wanna add shopping list

How to make it
- I'mma share my secret for perfect quinoa every time, you ready?
- Step 1: in a tight mesh colander, rinse the yucky, bitter film off the quinoa, and drain well.
- Step 2: in a large pot, add 1 Tbsp of oil, wait for it to get hot, then add the now rinsed quinoa.
- Step 3: let the quinoa cook on medium flame, stirring very often with a rubber spatula until it begins to pop softly and get this amazing nutty aroma. Keep stirring until it's mostly browned. Should take about 7-10 minutes. You do have to babysit it during this phase, so it doesn't burn. This is a good and necessary step, ok?
- Step 4: Add 3 cups of water to the pan, it'll sizzle. That's ok. Stir well, get all the quinoa off the spatula and into the water. Cut the heat to low, cover with a lid and set the timer for 15 minutes.
- Step 5: At the 15 minute mark, it's halfway done. Stir it well, it shouldn't be sticking to your spatula at this stage. Re-cover it and let it cook for an additional 10-15 minutes. It should have evaporated all the liquid by this point, but not burn onto the pan. Check it and see if it needs more time or more water.
- This is the method that yields me the most perfect, fluffy, delicious quinoa every time.
- In a separate pan, add the last Tbsp of oil, turn on low to medium flame and heat the onions. Let them cook for 2-3 minutes, add the beans, garlic, jalapeños, garlic, and seasoning. Let that simmer for about 3-5 minutes, then add as much of the cooked quinoa as you want. From here, feel free to add the mashed avocado, cheeses, or whatever you want. Once it's mixed and blended well, remove from the heat, add cilantro and lime juice.
