How to make it

  • Preheat oven to 350 degrees Fahrenheit
  • Spray Madeline tin with Pam, or cover a cookie sheet with parchment paper.
  • Melt butter in microwave; mine is one minute on “low”
  • Whip egg whites for four minutes until stiff. My stand mixer is handy for this.
  • Combine all dry ingredients except chocolate chips
  • Mix together all wet ingredients including the melted better (but not the egg whites)
  • Mix the wet and dry, incorporating the chocolate chips.
  • This will be a stiff dough. Fold in the egg whites gently. I ended up using my hands. Now you have a free flowing batter.
  • Fill the Madeleine tin or drop by tablespoon on to cookie sheet.
  • The batter will puff up satisfyingly so leave plenty of room.
  • Bake for ten minutes.
