Eastern Shore White Potato Pie

- 1-pound white potatoes (about 3 cups mashed) shopping list
- 2/3 cup butter (1 whole stick of butter, plus approximately 3 tablespoons from another stick) shopping list
- 1 2/3 cup sugar shopping list
- ½ cup heavy cream shopping list
- ½ cup Vanilla brandy (I use E&J Vanilla brandy or Spiced) or if you’re afraid of brandy use ½ cup of milk with a little vanilla shopping list
- 1 tsp of nutmeg shopping list
- 1 tsp. lemon extract shopping list
- 4 large eggs or 6 small shopping list
How to make it
- Preheat the oven to 350 degrees F.
- Cook potatoes, mashing them well mashed potatoes; while they are still warm put in 2/3 cup of butter and mix well.
- Add heavy cream to the potato mixture and mix well.
- In a separate bowl beat 4 eggs with 1 2/3 cups of sugar mix well, put in brandy and mix well.
- Combined the two mixtures and season with nutmeg, and lemon.
- Line a pie pan bottom with pie crust, homemade or store bought.
- Pour into the prepared pie pan and bake until firm and lightly browned, about 1 hour
