Stuffed Eggplant Parmesan

- 2-3 Med to large eggplant, peeled, sliced and soaked overnight shopping list
- 1 jar spaghetti sauce (any flavor) shopping list
- 1 large container ricotta cheese shopping list
- bread crumbs (I use seasoned) shopping list
- 2-3 Eggs shopping list
- mozzarella cheese ,shredded shopping list
How to make it
- Peel and slice the eggplant and put in a large bowl(not metal) cover eggplant slices with cool salted water overnight.
- Drain eggplant
- Crack & whisk eggs in a bowl and set aside
- pour bread crumbs into a small bowl and set aside
- dip slices of eggplant in egg then roll in bread crumbs
- fry in a pan until tender and golden brown
- place on a paper towel-lined plate to drain excess grease
- Line a 13"x9" baking dish with 1/2 jar of spaghetti sauce
- put ricotta cheese on half of the eggplant slice and fold the other half over(to look like a taco shell)
- place the eggplant in the dish folded side down in rows
- continue this until the pan is full and the eggplant is all used
- cover with remaining sauce and sprinkle with mozzarella cheese
- place in a preheated 350-degree oven and bake until cheese is bubbly and golden brown. about 30 minutes.
