How to make it

  • Peel and slice the eggplant and put in a large bowl(not metal) cover eggplant slices with cool salted water overnight.
  • Drain eggplant
  • Crack & whisk eggs in a bowl and set aside
  • pour bread crumbs into a small bowl and set aside
  • dip slices of eggplant in egg then roll in bread crumbs
  • fry in a pan until tender and golden brown
  • place on a paper towel-lined plate to drain excess grease
  • Line a 13"x9" baking dish with 1/2 jar of spaghetti sauce
  • put ricotta cheese on half of the eggplant slice and fold the other half over(to look like a taco shell)
  • place the eggplant in the dish folded side down in rows
  • continue this until the pan is full and the eggplant is all used
  • cover with remaining sauce and sprinkle with mozzarella cheese
  • place in a preheated 350-degree oven and bake until cheese is bubbly and golden brown. about 30 minutes.
