Banquet's Salisbury Steak: Grandma Erma's Version

- 2 Eggs, slightly beaten shopping list
- 1 Cup Milk - OR - broth shopping list
- 1 Cup Oats, Toss them in the blender for shopping list
- a few seconds to make them finer shopping list
- 1 medium red onion, diced fine, or to taste shopping list
- 4 Tablespoons fresh parsley, chopped shopping list
- - OR - 4 teaspoons well-crumbled parsley flakes shopping list
- - OR - 2 Tablespoons Italian Seasoning shopping list
- 1 teaspoon sea salt, Pink Himalayan or Celtic shopping list
- black pepper, fresh ground, to taste shopping list
- 1 pound Lean Ground beef shopping list

- 1/2 pound Ground chicken shopping list
- 1/2 pound Ground Sausage shopping list
- 1 Tablespoon Oil, Healthy, divided, in a sprayer is best shopping list
- 1/2 Cup broth, divided shopping list
- 2-3 Cups Homemade Brown Gravy shopping list

- For the gravy: shopping list

- 1/2 cup unsalted butter shopping list
- 1 small onion thinly sliced shopping list
- 8 ounces baby bella mushrooms sliced, optional shopping list
- 2 cloves garlic, minced shopping list
- 1/2 cup all-purpose flour shopping list
- 4 cups beef stock/broth shopping list
- 2 Tablespoons Worcestershire sauce shopping list
- 1 Tablespoon dijon mustard shopping list
- 1/2 teaspoon black pepper shopping list
- sea salt to taste, if using salted butter you may wish to omit shopping list
- fresh chopped parsley for garnish, optional shopping list

- Instructions: shopping list
- Over medium heat, add the butter and let it melt. shopping list
- Add the onion and mushrooms and cook, stirring occasionally, for about 5 minutes until the onions are softened. shopping list
- Add the garlic and stir it in until fragrant, 30 seconds. shopping list
- Add the flour and stir it in, coating the veggies, cook shopping list
- stirring constantly for 2 minutes. shopping list
- Slowly whisk in the beef stock/broth, making sure there are no lumps. shopping list
- Add the Worcestershire sauce, dijon mustard, and black pepper, whisk it in. shopping list
- Taste and add additional Worcestershire sauce if needed. shopping list
- Let the gravy simmer for 3 minutes, stirring occasionally. shopping list
- Serve and Enjoy! shopping list
How to make it
- In a mixing bowl, combine eggs, milk, oats, onion, parsley,
- salt and pepper; stir well and let sit for 10 minutes.
- Thoroughly combine ground meats into the oat mixture.
- Shape meat into 8 oval patties about 4 1/2 inches long.
- Spray large skillet with healthy oil, then sear 4 patties on
- both sides over high heat.
- Sealing all of the juices in, try to get the edges seared also.
- Reduce heat, add 1/4 cup broth; cover and simmer 10 minutes.
- Remove these 4 patties from the skillet.
- Set aside.
- Pour off the leavings, into a cooking pan to make the gravy in.
- Spray large skillet with healthy oil, then sear remaining 4 patties.
- Sealing all of the juices in, try to get the edges seared also.
- Reduce heat, add 1/4 cup broth; cover and simmer 10 minutes.
- Remove these 4 patties from the skillet.
- Pour off the leavings, into a cooking pan to make the gravy in.
- Just as you did before.
- Set steaks aside, with the other steaks.
- Make homemade brown gravy, using the leavings.
- Once gravy is made, you may just serve it right away.
- Serve over fresh sliced bread, with mashed potatoes and a vegetable.
- - OR - Make homemade egg noodles and serve over those!!!

- Spread a layer of gravy in a 12 by 8 glass pan, or 2 - 8 by 8 pans.
- Place the steaks on top of the gravy in the pan in a single layer.
- Pour remaining gravy over the steak patties.
- Cover with aluminum foil or just a cooking sheet.
- Bake for 20 minutes at 350 F.
- Remove from oven, Let sit for 10 minutes.
- Serve over fresh sliced bread, with mashed potatoes and a vegetable.
- - OR - Make homemade egg noodles and serve over those!!!

- IF FREEZING:
- Place steaks, uncovered, in the refrigerator for 1 hour or more
- until cool to the touch.
- While steaks are cooling, make your homemade brown gravy.
- Line pan you are going to bake salisbury steak in with foil,
- overlapping the ends.
- Cover bottom of pan with gravy.
- After steaks are cooled place in foil lined pan with gravy in bottom.
- Cover steaks with remaining gravy.
- Seal foil over top of steaks.
- Freeze.
- After frozen solid you can remove the pan and leave frozen package
- in the freezer.
- Just put it back in the same pan when you are ready to cook it.

- Cooking instructions (from frozen):
- Preheat oven to 450F for 10 minutes.
- Bake, uncovered, for 30 minutes or until bubbly around the edges.
- Remove steaks from pan, stir gravy, then pour gravy back over steaks.
