How to make it

  • Melt butter in a pan on low medium heat, add the onion and cook, stirring occasionally some 5 minutes or so until softened and golden in colour;
  • Stir in the tomatoes, season with salt and pepper and cook, stirring occasionally, for some 20 to 30 minutes or so or until the tomatoes have reduced & separated from the butter;
  • Stir in the basil and cook, stirring occasionally, for some 2 to 3 minutes or so;
  • Remove from heat and set aside;
  • Put the pasta on to cook according to packet instructions;
  • When the pasta has cooked for some 6/7 minutes or so, return the sauce to cook on a low heat.
  • When Pasta ready, drain and transfer to a lightly heated serving bowl;
  • Pour in the sauce and toss to mix in well with the pasta;
  • Add the Mozzarella pieces then cover the bowl with a plate and allow to stand for 3 to 5 minutes so the cheese melts somewhat before serving.
