Italian Plum Tomatoes - Onion - Basil & Mozzarella Cheese

- 60g/2oz butter shopping list
- 120g/4oz Onion - finely sliced shopping list
- 1½ 400g Tins Whole Italian Plum Tomatoes shopping list
- 250g/8oz Buffalo/Cow´s Mozzarella cheese - diced into 6mm/¼ pieces shopping list
- 2tbsp Fresh basil leaves - roughly torn into small pieces shopping list
- Salt & freshly ground black pepper shopping list
- 500g Pasta of Choice - Buccatini/Spaghetti/ shopping list
How to make it
- Melt butter in a pan on low medium heat, add the onion and cook, stirring occasionally some 5 minutes or so until softened and golden in colour;
- Stir in the tomatoes, season with salt and pepper and cook, stirring occasionally, for some 20 to 30 minutes or so or until the tomatoes have reduced & separated from the butter;
- Stir in the basil and cook, stirring occasionally, for some 2 to 3 minutes or so;
- Remove from heat and set aside;
- Put the pasta on to cook according to packet instructions;
- When the pasta has cooked for some 6/7 minutes or so, return the sauce to cook on a low heat.
- When Pasta ready, drain and transfer to a lightly heated serving bowl;
- Pour in the sauce and toss to mix in well with the pasta;
- Add the Mozzarella pieces then cover the bowl with a plate and allow to stand for 3 to 5 minutes so the cheese melts somewhat before serving.
