Slow-cooker Sausage And Pepper Casserole Recipe

- 12 Large Brown Eggs Grade A shopping list
- 3⁄4 cup Half & Half shopping list
- 1⁄2 teaspoon crushed red pepper flakes shopping list
- coarse salt, to taste shopping list
- Freshly ground pepper, to taste shopping list
- 2 cups shredded cheddar cheese, divided shopping list
- 8 green onions, chopped, divided shopping list
- 1 bag Shredded Potatoes shopping list
- 1 pound bulk pork sausage, cooked, drained shopping list
- 1 cup red bell pepper, cored and chopped shopping list
How to make it
- (1) Spray a slow cooker with cooking spray.
- (2) In medium bowl, beat eggs, half-and-half, pepper flakes, salt and pepper with whisk.
- (3) Reserve 3/4 cup cheddar cheese and 2 tablespoons green onions for later; set aside.
- (4) Layer half of potatoes, sausage, peppers, remaining green onions and cheese in slow cooker. Repeat layers. Pour egg mixture over layers.
- (5) Cover and cook on low heat for 4 to 5 hours or on high 2½ to 3 hours until egg mixture is set.
- (6) Sprinkle reserved cheese and green onions over top of casserole. Cover and cook 10 minutes longer or until cheese is melted.
