How to make it

  • (1) Spray a slow cooker with cooking spray.
  • (2) In medium bowl, beat eggs, half-and-half, pepper flakes, salt and pepper with whisk.
  • (3) Reserve 3/4 cup cheddar cheese and 2 tablespoons green onions for later; set aside.
  • (4) Layer half of potatoes, sausage, peppers, remaining green onions and cheese in slow cooker. Repeat layers. Pour egg mixture over layers.
  • (5) Cover and cook on low heat for 4 to 5 hours or on high 2½ to 3 hours until egg mixture is set.
  • (6) Sprinkle reserved cheese and green onions over top of casserole. Cover and cook 10 minutes longer or until cheese is melted.
