How to make it

  • The ducks was defrosted yesterday an marinade cut in half in milk .. over night
  • Then this morning I rinsed off the ducks and seasoned with salt pepper black and red … put into a baking bag like oven baking kind .. baked for a hour ..
  • in my black pot I cooked sausage an Tasso made a gravy ( any one knows I’m thinking on how to make that if not send me a message I’ll post a recipe if I don’t have one )
  • once the hour was up on baking took the ducks out an put into another bowl an poured cold water onto the ducks to cool before deboning
  • … now in my gumbo pot I have my homemade roux done an seasoned an add my sausage an Tasso to the roux an filtered water .. then cooking on a med to low heat / the duck is now deboned an I add it to the gumbo pot .. an built my gumbo from the bottom up to get to my right .. liquid thickness or thinness I wanted .. anyone that reads this is welcome to use my recipe since I’m putting it out here lol … just make to your liking … I loved mine … I know it seems a lot of steps but Gosh .. we want to eat good !! 😂 an I can date an freeze it for a day that is cold an I might have dr appointments or some other things to do .. Enjoy💕
  • *** just remember if you add a lot of pepper an freeze in ziplock bags for a later time to eat keep in mine it will be hotter taste of pepper .
