How to make it

  • Heat oil in stock pot.
  • When oil is hot add onion, garlic, celery, and carrot and sweat vegetables for a couple minutes until onions start to turn translucent.
  • Add dried spices, tomato paste and sweat for another 30 seconds.
  • Add chicken broth and barley.
  • Cook for about 30 minutes or until barley is softened.
  • Add leftover chicken and spinach and cook till warmed thru and spinach is wilted.
