Easy Chicken Barley Soup

- 1 T. oil shopping list
- 1/2 medium onion finely chopped shopping list
- 2 cloves of garlic minced shopping list
- 2 ribs celery finely diced shopping list
- 2 carrots peeled and diced shopping list
- 1/4 t. dried thyme OR poultry seasoning shopping list
- 1 T. tomato paste (optional) shopping list
- 4 cups chicken broth shopping list
- 1/2 cup pearled barley rinsed shopping list
- salt and pepper to taste shopping list
- about 8 oz of leftover shredded rotisserie chicken shopping list
- 2 cups (or there about) roughly chopped fresh spinach shopping list
How to make it
- Heat oil in stock pot.
- When oil is hot add onion, garlic, celery, and carrot and sweat vegetables for a couple minutes until onions start to turn translucent.
- Add dried spices, tomato paste and sweat for another 30 seconds.
- Add chicken broth and barley.
- Cook for about 30 minutes or until barley is softened.
- Add leftover chicken and spinach and cook till warmed thru and spinach is wilted.
