Gluten Free Apple Muffins Recipe
My daughter loves these because they have her fvorite fruit in them. These are also great for breakfast on the go.

Ingredients
  • 1 tspn of cinnamon
  • 1 c of rice flour
  • 3 tbspn canola oil
  • 3/4 tspn of salt
  • 1 grated apple
  • 1/3 c of sugar
  • 2 eggs
  • 1/2 tspn of bicarbonate of soda
  • 1 tspn of baking powder

Directions
  1. You want to start with your dry ingredients first
  2. quickly add your wet ingredients and any other flavors that you may want.
  3. Grease your muffin pan or use the muffin cups and start placing the dough in them
  4. Then heat your oven to 180 F and cook til bron or firm to the touch.

Alterations


My beloved, who has fifteen years of gluten-free living under her belt, finds straight rice flour to be a little gritty, so we changed it to a blend of 1/3 c rice flour, 1/3 c tapioca flour, and 1/3 c of potato flour. I also added a splash of vanilla.
