How to make it

  • Blend sugar, cornstarch and salt.
  • Gradually add milk mixing well then cook and stir until smooth, thickened and clear.
  • Stir in bananas until well combined.
  • Stir a little of the pudding into beaten egg then return to pudding.
  • Add butter and vanilla then mix well and chill in refrigerator.

    a pretty standard recipe for any cornstarch pudding. I use 3 egg yolks for all cornstarch puddings, reserving whites for meringue. Beat until slightly thickened and stir into the mix before cooking. Adding after cooking means raw eggs even if stirred into hot pudding. The egg makes the pudding dense, rich, and silky smooth. Fewer yolks, less dense. No egg No problem. Cornstarch is the chief thickener. Eggs can also be used in boxed cooked pudding
    I also reduce the sugar to 1/2 c.
    Can be layered with any fruit.

    Beaten egg is mentioned in the directions, but not in the ingredients. Since it says "egg", I am assuming one egg. I hope this is right!
