This is an incredible delightful side dish that goes great with just about everything. Hope you enjoy as much as we do. Yummers.

Ingredients
  • 3 leeks
  • 1 pound frozen peas defrosted
  • 1 lemon zest and juice
  • 1 clove garlic mashed
  • 1 teaspoon oregano
  • 2 tablespoons olive oil

Directions
  1. Cut leeks into chunks and blanch for 5 minutes.
  2. Drain well and allow to cool.
  3. Toss leaks with remaining ingredients and mix well.
