How to make it

  • Combine flour, sugar, baking powder, cinnamon and nutmeg in mixing
  • bowl. In separate bowl beat egg whites until stiff. Combine milk
  • and pumpkin in large measuring cup. Add milk and pumpkin mixture to
  • dry ingredients, mixing well. Fold egg whites into flour mixture.
  • Heat griddle to medium and brush lightly with oil. Pour 1/4 cup
  • batter onto griddle for each pancake. Cook until tops are bubbly
  • then turn and cook until remaining side is golden brown.
