Plump Pumpkin Pancakes

- 2 cups all purpose flour shopping list
- 2 tablespoons light brown sugar shopping list
- 1 tablespoon baking powder shopping list
- 1 teaspoon ground cinnamon shopping list
- 1 teaspoon ground nutmeg shopping list
- 2 egg whites shopping list
- 1-1/2 cups skim milk shopping list
- 1/2 cup canned pumpkin shopping list
- 1 teaspoon oil shopping list
How to make it
- Combine flour, sugar, baking powder, cinnamon and nutmeg in mixing
- bowl. In separate bowl beat egg whites until stiff. Combine milk
- and pumpkin in large measuring cup. Add milk and pumpkin mixture to
- dry ingredients, mixing well. Fold egg whites into flour mixture.
- Heat griddle to medium and brush lightly with oil. Pour 1/4 cup
- batter onto griddle for each pancake. Cook until tops are bubbly
- then turn and cook until remaining side is golden brown.
