Here's a way to jazz up a bean and corn dish. Presentation is the best part-very colorful and goes well with chicken, fish, beef you name it! This is the only 'bean' dish my kids will touch.

Ingredients
  • 2 tbsp olive oil
  • 1 medium sized red onion chopped finely
  • 1/2 bunch cillantro chopped finely
  • 2c frozen corn-thawed
  • 3c drained and rinsed black beans
  • 2 cloves garlic minced-or equiv from jar

Directions
  1. Heat oil in lg saute pan on med heat
  2. Add onion and garlic
  3. Saute them 6-8min
  4. Stir in beans and corn
  5. Reduce heat to low and cook stiring until corn is tender 8-10min
  6. Stir in cilantro and serve
  7. Enjoy
