Vidalia Onion And Ham Bruschetta Recipe
This can be used as an appetizer or as a cold sandwich filling in a hollowed-out roll or pita. It is super easy and low fat.

Ingredients
  • 4 ounces sliced low-fat ham, cut into 1-inch pieces about 1 cup
  • 1 vidalia onion, chopped, should have about 1 cup
  • 1 cup chopped plum tomatoes
  • 2 tablespoons reduced-fat mayonnaise
  • 1 tablespoon yellow or dijon mustard
  • 8 large slices of thick Italian bread, toastd

Directions
  1. Pre-heat oven to 400°.
  2. In a bowl, combine ham, vidalia onion, tomatoes, mayonnaise and mustard.
  3. Arrange bread on a large baking sheet.
  4. Top with ham mixture.
  5. Bake until heated through, about 10-15 minutes.
  6. Serve at room temperature.
  7. Again, this can be served cold in hollowed-out roll or in pita bread.
