  • 250 mL (1 cup) milk
  • 250 mL (1 cup)Sunny Boy Cereal
  • 1 egg
  • 60 mL (2 tablespoons) shortening
  • 125 mL (1/2 cup)white sugar
  • 2.5 mL (1/2 teaspoon) salt
  • 5 mL (1 teaspoon) baking soda
  • 250 mL (1 cup) white flour
  • 250 mL (1 cup) fresh, frozen or dried fruits, like saskatoons, rhubarb, raspberries,
  • blueberries, cranberries or raisins

Directions
  1. Warm the milk almost to a boil and stir in the Sunny Boy cereal. Set aside for at least 30 minutes.
  2. In the meantime, preheat the oven to 180 C (350 F) and grease the cups of the muffin tin.
  3. Mix the soaked cereal, the egg and shortening together in a mixer.
  4. Combine the salt, baking soda and the flour. Add to the batter.
  5. Mix in fruit.
  6. Fill each muffin cup almost to the top and bake for 25 minutes, or until the tops are a light golden brown.
  7. Makes 8 to 10 muffins.

Alterations


All I did is heat up the milk in the microwave for about 2 minutes at 75% power, pour in the oatmeal and let sit for 10 minutes. Then I just put all the ingredients in a bowl and whipped it up with a whisk. Turned out great.
