Sunny Boy Muffins

- 250 mL (1 cup) milk shopping list
- 250 mL (1 cup)Sunny Boy cereal shopping list
- 1 egg shopping list
- 60 mL (2 tablespoons) shortening shopping list
- 125 mL (1/2 cup)white sugar shopping list
- 2.5 mL (1/2 teaspoon) salt shopping list
- 5 mL (1 teaspoon) baking soda shopping list
- 250 mL (1 cup) white flour shopping list
- 250 mL (1 cup) fresh, frozen or dried fruits, like saskatoons, rhubarb, raspberries, shopping list
- blueberries, cranberries or raisins shopping list
How to make it
- Warm the milk almost to a boil and stir in the Sunny Boy cereal. Set aside for at least 30 minutes.
- In the meantime, preheat the oven to 180 C (350 F) and grease the cups of the muffin tin.
- Mix the soaked cereal, the egg and shortening together in a mixer.
- Combine the salt, baking soda and the flour. Add to the batter.
- Mix in fruit.
- Fill each muffin cup almost to the top and bake for 25 minutes, or until the tops are a light golden brown.
- Makes 8 to 10 muffins.
