This has a sweet, spicy, corn crunch coating that updates old baked chicken to something really special!

Ingredients
  • 8 pieces of chicken thighs or drumsticks (You can also use pieces of boneless chicken and mixture will make enough for about 1 lb., depending on the size of the boneless pieces)
  • 2 eggs
  • 1 cup buttermilk (or plain milk)
  • 1 cup Captain Crunch cereal
  • 1 cup Corn Flakes (any brand)
  • 1 teaspoon black pepper (or cayenne if you like it hotter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup regular plain flour

Directions
  1. Take the Captain Crunch cereal and the Corn Flakes cereal and place in a large baggie, seal and carefully crush with a rolling pin to make crumbs. Empty into a large bowl and add pepper, garlic powder, onion powder & flour. In a separate bowl, whisk eggs and milk together. Dip chicken pieces into egg batter, then into crumb mixture, coating well. Place pieces into baking dish or pan usually used to bake chicken. Bake at 350 degrees for approximately 45 minutes or until chicken is thoroughly done.
