Pork And Apple Stew Recipe
This is an easy pork dish to throw together. The pork is lean and the apples and apple juice give a sweet taste. Great over mashed potatoes or rice.

Ingredients
  • 1 pound boneless pork shoulder, cut in 3/4-inch cubes
  • 4 tablespoons vegetable oil
  • 1/4 cup chopped onion
  • 1/2 can condensed beef broth
  • 2/3 cup apple juice
  • water
  • 1/2 teaspoon crushed thyme leaves
  • 1 medium bay leaf
  • pepper to taste
  • 1 cup sliced carrots
  • 2 apples, cored and chopped
  • 2-3 tablespoons all-purpose flour
  • mashed potatoes or rice to serve under

Directions
  1. Trim fat from pork.
  2. In a saucepan, brown pork in oil; pour off fat.
  3. Add onion, broth, apple juice, 1/3 cup water and seasonings.
  4. Heat to a boil.
  5. Reduce heat to low, cover.
  6. Simmer for 1 hour 30 minutes.
  7. Add carrots.
  8. Simmer 25 minutes more or until done.
  9. Gradually blend 1/4 cup water into flour until smooth.
  10. Slowly stir into stew mixture.
  11. Cook, stirring until thickened.
  12. Serve immediately.
