Ingredients
  • 1/4 cup unsalted butter
  • 2/3 cup sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • Nonstick cooking spray
  • 3 ripe apricots peeled halved and pitted

Directions
  1. Preheat oven to 350.
  2. Beat butter in a mixing bowl with electric mixer on high speed for 30 seconds.
  3. Gradually add sugar and continue to beat until mixture is pale yellow and very fluffy.
  4. Add eggs one at a time while mixing on low speed then stir in vanilla.
  5. Sift flour, baking powder and salt together.
  6. Add half of the flour mixture and blend then add milk then add remaining flour mixture.
  7. Coat round cake pan with nonstick spray then pour batter into pan.
  8. Arrange apricot halves on top in a single layer and bake 30 minutes.
