My variation on a recipe I got from a Vietnamese classically trained chef!

Ingredients
  • 4 large ripe bananas
  • 3/4 loaf of large challah bread
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/2 cup coconut flakes
  • 1/2 cup condensed milk
  • 1 large egg
  • 1/8 tsp cinnamon
  • 1 1/2 tsp good vanilla extract

Directions
  1. Preheat oven to 350 F.
  2. cut bananas into thin slices
  3. break or cut bread into small pieces or cubes (1/4" or 5 mm).
  4. put bread, coconut milk, sugar, coconut flakes, condensed milk and the egg into a bowl and stir gently.
  5. Add banana slices when well mixed, save some for decorative effect if desired.
  6. spread mixture into a baking dish, 9 inch pie size. If decorative effect with bananas is desired, placed them now.
  7. baked for 45 minutes.
  8. allow to cool.
  9. also great for breakfast.
  10. I use remaining coconut milk and condensed milk with a bit of vanilla for a sauce, consider adding a touch of spiced rum or other liqueur.
