Zucchini Relish Recipe
This relish goes great with Hamburgers at summer barbecues or as a side pickle if pieces are left larger.We all love it.Great for all those extra Zucchini.

Ingredients
  • 10 cups zucchini
  • 4 cups onions
  • 5 tablespoons salt
  • 1 tablespoon dry mustard
  • 1 tablespoon cornstarch
  • 2 teaspoons celery seed
  • 1 red pepper
  • 1 green pepper
  • 5 cups sugar
  • 2 and 1/2 cups vinegar(cider)
  • 1 teaspoon black pepper

Directions
  1. chop zucchini and onions (if you choose you can leave pieces larger and make a pickle instead of a relish)
  2. add salt and mix
  3. cover and let set overnight
  4. next day wash mixture well and drain off water
  5. put in large pot and add mustard,cornstarch and celery seed
  6. chop peppers and add to mixture
  7. add sugar ,vinegar and pepper
  8. mix well and heat through then cook on medium heat for about 30 minutes .
  9. bottle in sterilized mason jars and enjoy.
