Lamb And Kumera Pumpkin Cottage Pie Recipe
This is a variation of old fashioned cottage pie,it's easy and contains main food croups

Ingredients
  • 1 tbs extra virgen olive oil
  • 1 br.onion coursely chopped
  • 1garlic cl..crushed
  • 3 tsp.gr.coriander
  • 1tsp.gr.cumin
  • 1tsp gr.cinnamon
  • 1/4tsp gr. chilli
  • 500g lamb mince
  • 1 400g can diced tomatoes
  • 1/2 cup chicken stock
  • 2tbs tomato paste
  • 1.5kg kumera or butternut pumpkin, cooked & mashed
  • 1 cup coarsely grated cheddar
  • macadamias or pecans or pine nuts

Directions
  1. Heat oil in a lge. fry pan over medium heat.Add onion and cook,stirring every now & then.For 6 mins. til' onion is soft
  2. Add garlic,gr coriander,cumin,cinnamon and chilli & cook,stirring for 1 minute til' aromatic
  3. Increase heat to high.Add mince and cook,stirring with wooden spoon to break lumps,for 5 mins. til' brown.
  4. tip pan to remove excess fat. Stir in Tomato,stock and paste.
  5. Reduce heat to medium & simmer for 15 mins.
  6. Meanwhile cook kumera til' tender use fork to mash
  7. Preheat oven to 200 centigrade.
  8. Put meat mix in 5 or 6 cup casserole
  9. Spoon kumera over mince and spread
  10. sprinkle with cheddar and nuts
  11. Bake in oven for 20-25 mins til' cheese is golden & nuts toasted.
  12. Set aside for 5 mins. to cool.Serve
