Lamb and kumera pumpkin Cottage Pie

- 1 tbs extra virgen olive oil shopping list
- 1 br.onion coursely chopped shopping list
- 1garlic cl..crushed shopping list
- 3 tsp.gr.coriander shopping list
- 1tsp.gr.cumin shopping list
- 1tsp gr.cinnamon shopping list
- 1/4tsp gr. chilli shopping list
- 500g lamb mince shopping list
- 1 400g can diced tomatoes shopping list
- 1/2 cup chicken stock shopping list
- 2tbs tomato paste shopping list
- 1.5kg kumera or butternut pumpkin, cooked & mashed shopping list
- 1 cup coarsely grated cheddar shopping list
- macadamias or pecans or pine nuts shopping list
How to make it
- Heat oil in a lge. fry pan over medium heat.Add onion and cook,stirring every now & then.For 6 mins. til' onion is soft
- Add garlic,gr coriander,cumin,cinnamon and chilli & cook,stirring for 1 minute til' aromatic
- Increase heat to high.Add mince and cook,stirring with wooden spoon to break lumps,for 5 mins. til' brown.
- tip pan to remove excess fat. Stir in Tomato,stock and paste.
- Reduce heat to medium & simmer for 15 mins.
- Meanwhile cook kumera til' tender use fork to mash
- Preheat oven to 200 centigrade.
- Put meat mix in 5 or 6 cup casserole
- Spoon kumera over mince and spread
- sprinkle with cheddar and nuts
- Bake in oven for 20-25 mins til' cheese is golden & nuts toasted.
- Set aside for 5 mins. to cool.Serve
