Roasted Tomato and Arugula Soup

How to make it
- Prepare a sweet roasted tomato soup, or buy a box of the ready-made stuff. I always use Trader Joe's roasted tomato and red pepper soup. It's sweet, delicious, and tastes surprisingly fresh for a premade soup. Butternut squash soup is also nice paired with arugula.
- Pour soup into bowl.
- Dump arugula until it is heaping over the bowl.
- Microwave about a minute.
- Stir the arugula into the tomato soup.
- Microwave a little more if necessary, until soup is hot.
- Nice with buttered whole-grain toast or with open-faced proscuitto sandwich if you're really starving.
- If you use spinach in the tomato soup, or if you use squash soup, you can also grate some fresh parmesan cheese on top. A hint of fresh-grated nutmeg or a little fresh sage also livens up butternut squash soup.
- Note: You can also prepare this on the stovetop. If you're making more than one serving at a time, it's just as easy that way.
