Creole Potato Salad

- 6 medium russet potatoes peeled shopping list
- 7 hard boiled eggs shopping list
- 1 cup chopped celery shopping list
- 1 cup mayonnaise shopping list
- 4 tablespoons sweet pickle relish shopping list
- 1/4 cup green onion finely chopped shopping list
- 1/4 cup yellow onion finely chopped shopping list
- 1/4 cup green bell pepper finely chopped shopping list
- 2 tablespoons yellow mustard shopping list
- 1 tablespoon cider vinegar shopping list
- 1 tablespoon dried parsley leaves shopping list
- 2 teaspoons creole seasoning mix (recipe below) shopping list
- 1 teaspoon celery salt shopping list
- 1 teaspoon seasoned pepper shopping list
- 1/2 teaspoon hot pepper sauce shopping list

- 4 tablespoons paprika shopping list
- 2 tablespoons garlic powder shopping list
- 2 tablespoons onion powder shopping list
- 1 tablespoon chili powder shopping list
- 1 tablespoon cayenne pepper shopping list
- 1 tablespoon white pepper shopping list
- 1 tablespoon black pepper shopping list
- 1 tablespoon celery seed shopping list
- 1 tablespoon dried oregano leaves shopping list
- 1 tablespoon dried basil leaves shopping list
- 2 teaspoons kosher salt shopping list
- 2 teaspoons dried thyme leaves shopping list
How to make it
- Creole seasoning -- mix together in airtight container and shake several times to combine flavors.
- Boil potatoes in water until done then when cool enough cut potatoes into cubes.
- Boil eggs in water until done then remove shells from eggs and dice.
- In large bowl blend potatoes, eggs and remaining ingredients by stirring gently with large spoon.
- Refrigerate before serving.
