Ingredients
  • 1 (10 lb) geese
  • 1 1/2 pts. of stock
  • 1 tsp of pepper
  • 1 tsp of salt
  • Stuffing
  • 6 large dessert apples, peeled cored chopped
  • 4 tbsp. of dark rum
  • 12 oz of fresh breadcrumbs
  • 1/4 tsp. of sage
  • 1/4 tsp. of ground mace
  • 1/8 tsp. of salt
  • 1/8 tsp. of pepper

Directions
  1. First you want to soak the chopped apples in 4 Tbsp of dark rum for approx. 4 hours.
  2. Now preheat oven to 350 F.
  3. Then you can place the goose on a rack in a rosting pan.
  4. Next you need to mix together the apples, sage, mace and breadcrumbs.
  5. Now eason to taste with salt and pepper and spoon inside the goose cavity.
  6. Add in the salt and pepper and rub all over the outside of the goose.
  7. prick the entire goose with a fork.
  8. Put a lid on the the breast with a piece of greased aluminium foil.
  9. Let the goose roast for approx. 30 minutes at 350 F.
  10. When you removegoose from oven, skim off excess fat.
  11. Now is a good time to pour stock all over the goose.
  12. Put the cover over goose with greased aluminium foil and roast for 2 1/2 hours.
  13. Then take off the foil and cook for 1 hour so the breast crips and browns.
  14. After pulling goose out from oven, put the goose on a warmed serving dish skimming fat from pan.
  15. Put the juices in a pot and let come to a boil, making a thickened gravy.
