Roasted Goose

- 1 (10 lb) geese shopping list
- 1 1/2 pts. of stock shopping list
- 1 tsp of pepper shopping list
- 1 tsp of salt shopping list
- Stuffing shopping list
- 6 large dessert apples, peeled cored chopped shopping list
- 4 tbsp. of dark rum shopping list
- 12 oz of fresh breadcrumbs shopping list
- 1/4 tsp. of sage shopping list
- 1/4 tsp. of ground mace shopping list
- 1/8 tsp. of salt shopping list
- 1/8 tsp. of pepper shopping list
How to make it
- First you want to soak the chopped apples in 4 Tbsp of dark rum for approx. 4 hours.
- Now preheat oven to 350 F.
- Then you can place the goose on a rack in a rosting pan.
- Next you need to mix together the apples, sage, mace and breadcrumbs.
- Now eason to taste with salt and pepper and spoon inside the goose cavity.
- Add in the salt and pepper and rub all over the outside of the goose.
- prick the entire goose with a fork.
- Put a lid on the the breast with a piece of greased aluminium foil.
- Let the goose roast for approx. 30 minutes at 350 F.
- When you removegoose from oven, skim off excess fat.
- Now is a good time to pour stock all over the goose.
- Put the cover over goose with greased aluminium foil and roast for 2 1/2 hours.
- Then take off the foil and cook for 1 hour so the breast crips and browns.
- After pulling goose out from oven, put the goose on a warmed serving dish skimming fat from pan.
- Put the juices in a pot and let come to a boil, making a thickened gravy.
