Tomato Fritters

- 1-28 ounce can tomaotes, drained shopping list
- 1 cup all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon sugar shopping list
- 2 tablespoons fresh basil, minced or 1/4 teaspoon dried basil shopping list
- salt and pepper shopping list
- 1 tablespoon minced onion shopping list
- 1 tablesoon fresh minced parsley shopping list
- 1/2 teaspoon worcestershire sauce, I used a bit more shopping list
- 1 egg shopping list
- vegetable oil for frying shopping list
How to make it
- In a large bowl, combine flour, baking powder, sugar, basil and salt and pepper. Mix well.
- Cut tomatoes into 1/2-inch pieces and drain on a paper towel.
- Add tomatoes to the flour mixture.
- Add the onion parsely and Worcestershire sauce.
- Toss, but don't mix.
- In a small bowl, beat egg nd add it to the flour-tomato mixture.
- Blend lightly with a fork
- Heat oil in a fry pan.
- Drop the batter by tablespoons full into the hot oil
- Fry unitl golden brown on both sides.
- Keep fritters warm in the oven until ready to serve.
