Banana Cake

- 125g butter, softened (you can use light margarine or nornal margarine) shopping list
- 330g (1 1/2 cups) sugar shopping list
- 2-3 large bananas. shopping list
- 1/2 teaspoon vanilla essence shopping list
- 2 large eggs (I use 3 egg whites and the cake came out perfect) shopping list
- 100ml (1/3 cup + 1 tablespoon) buttermilk shopping list
- 225g (1 1/2 cups) self-raising flour shopping list
- 1/2 teaspoon bicarbonate of soda shopping list
- 100 g. raisins. shopping list
- 100 g. desiccated coconut. shopping list
- Icing: shopping list
- 45g butter, softened (I use light margarine) shopping list
- 210g (1 2/3 cups) icing sugar (I use less than a cup of icing sugar, but if you like it very sweet then use all the quantity) shopping list
- 1 1/2 teaspoons lemon/orange juice. shopping list
- 1 1/2 teaspoons desiccated coconut. shopping list
How to make it
- Preheat oven to 160 degrees Celsius (fan-forced). If you don't have a fan-forced oven, preheat the oven to 180 degrees Celsius. Grease the pan you are going to use.
- Place butter, sugar, banana, vanilla and eggs in a bowl, then mix then.
- When everything is well mixed, add butter milk.
- Sift flour and bicarbonate of soda together into a large bowl. Add flour/bicabornate to the other mixture and mix until everything is well combined.
- Pour batter into prepared tin.
- Bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean.
- Leave cake to cool on a wire rack, and when the cake is cool, spread the icing.
