It is a normal banana cake with 2 extra ingredients (raisins and coconut) that make it more delicious :)

Ingredients
  • 125g butter, softened (you can use light margarine or nornal margarine)
  • 330g (1 1/2 cups) sugar
  • 2-3 large bananas.
  • 1/2 teaspoon vanilla essence
  • 2 large eggs (I use 3 egg whites and the cake came out perfect)
  • 100ml (1/3 cup + 1 tablespoon) buttermilk
  • 225g (1 1/2 cups) self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 100 g. raisins.
  • 100 g. desiccated coconut.
  • Icing:
  • 45g butter, softened (I use light margarine)
  • 210g (1 2/3 cups) icing sugar (I use less than a cup of icing sugar, but if you like it very sweet then use all the quantity)
  • 1 1/2 teaspoons lemon/orange juice.
  • 1 1/2 teaspoons desiccated coconut.

Directions
  1. Preheat oven to 160 degrees Celsius (fan-forced). If you don't have a fan-forced oven, preheat the oven to 180 degrees Celsius. Grease the pan you are going to use.
  2. Place butter, sugar, banana, vanilla and eggs in a bowl, then mix then.
  3. When everything is well mixed, add butter milk.
  4. Sift flour and bicarbonate of soda together into a large bowl. Add flour/bicabornate to the other mixture and mix until everything is well combined.
  5. Pour batter into prepared tin.
  6. Bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean.
  7. Leave cake to cool on a wire rack, and when the cake is cool, spread the icing.
  8. Enjoy :)
