Brazos River Bottom Pie

- 1 pie crust shopping list
- 1/2 cup sugar shopping list
- 2 TBS cornstarch shopping list
- 1/2 tsp salt shopping list
- 2 Cups milk shopping list
- 2 eggs, seperated shopping list
- 2 tsp unflavored gelatin shopping list
- 3 TBS cold water shopping list
- 2 TBS rum or 2 tsp rum flavoring shopping list
- 1 ounce melted unsweetened chocolate (cool) shopping list
- 1/4 tsp cream of tartar shopping list
- 1/3 cup sugar shopping list
How to make it
- Bake pie shell as directed on package.
- In saucepan, stir together 1/2 cup sugar, cornstarch and salt
- Blend milk and egg yolks; stir into sugar mixture,
- Cook over medium heat stirring constantly, just unil mixture boils
- Reserve 1 cup of mixture; set aside
- Soften gelatin in cold water;stir into remaining hot mixture in pan
- Stir in rum, chill in refrigerator ,stirring occasionally
- Until mixture mounds slightly when dropped from spoon
- Combine chocolate and the reserved mixture; pour in pie shell
- Beat egg whites and cream of tartar until foamy. Beat in 1/3 cup sugar 1 tablespoon at a time, keep beating until stiff and glossy
- Do not underbeat
- Fold gelatin mixture into meringue
- Spread on chocolate mixture.
- Chill at least three hours or until set.
