Ingredients
  • 1 pie crust
  • 1/2 cup sugar
  • 2 TBS cornstarch
  • 1/2 tsp salt
  • 2 Cups Milk
  • 2 eggs, seperated
  • 2 tsp unflavored gelatin
  • 3 TBS cold water
  • 2 TBS rum or 2 tsp rum flavoring
  • 1 ounce melted unsweetened chocolate (cool)
  • 1/4 tsp cream of tartar
  • 1/3 cup sugar

Directions
  1. Bake pie shell as directed on package.
  2. In saucepan, stir together 1/2 cup sugar, cornstarch and salt
  3. Blend milk and egg yolks; stir into sugar mixture,
  4. Cook over medium heat stirring constantly, just unil mixture boils
  5. Reserve 1 cup of mixture; set aside
  6. Soften gelatin in cold water;stir into remaining hot mixture in pan
  7. Stir in rum, chill in refrigerator ,stirring occasionally
  8. Until mixture mounds slightly when dropped from spoon
  9. Combine chocolate and the reserved mixture; pour in pie shell
  10. Beat egg whites and cream of tartar until foamy. Beat in 1/3 cup sugar 1 tablespoon at a time, keep beating until stiff and glossy
  11. Do not underbeat
  12. Fold gelatin mixture into meringue
  13. Spread on chocolate mixture.
  14. Chill at least three hours or until set.
