    Just like my grandma used to make! This is a delicious, fast, easy cake. I add a heaping tablespoon of applesauce to add a bit more moistness to the cake texture. I also use olive oil for the shortening. I sometimes also add cinnamon or raisins or small walnut pieces. So many varieties to make!

    Made this cake after searching for one with just 1 egg...love it! Everyone enjoyed it. As an extra we added some sugar, cinnamon and slivered almonds to the top. Today we are making it again with diced apple sugar and cinnamon added to the top before baking...Yum! Thanks..

    In desperation, with only one egg in the house and a powerful craving for cake, we searched the internet for "1 egg cake" and were delivered here. This cake is VERY good, especially considering the ease of making it and the short ingredient list. We added chocolate chips (and used butter instead of shortening) but believe it would also be great with some orange zest or candied lemon peel. Excellent!

    This cake is deliciously light and moist.
    I mixed it up within 3 minutes and to be honest, I wasn't really holding out much hope for it. However, it is a screaming success!!

    this cake is so deliscious and wholesome since I substituted shortening for butter and I used an organic egg as well. Everyone absolutely loved the taste and the moistness of the cake, it went so fast! I must also add that it was the easiest cake I ever baked. Thank you!!!!!!!!!!!!!!!!Yes, just like Grandma's!!!!!!!!!!!!!!!!!!!!!!
