This cake is so deliscious and wholesome since I substituted shortening for butter and I used an organic egg as well. Everyone absolutely loved the taste and the moistness of the cake, it went so fast! I must also add that it was the easiest cake I ever baked. Thank you!!!!!!!!!!!!!!!!Yes, just like Grandma's!!!!!!!!!!!!!!!!!!!!!!

This cake is deliciously light and moist.
I mixed it up within 3 minutes and to be honest, I wasn't really holding out much hope for it. However, it is a screaming success!!
Many thanks.

In desperation, with only one egg in the house and a powerful craving for cake, we searched the internet for "1 egg cake" and were delivered here. This cake is VERY good, especially considering the ease of making it and the short ingredient list. We added chocolate chips (and used butter instead of shortening) but believe it would also be great with some orange zest or candied lemon peel. Excellent!
