Veg Makhanwala Indian Cream Vegetables Recipe
This dish is an excellent bring your own entre for family / friend pot lucks. I always bring this for thanksgiving and they all love it!

Ingredients
  • 2 tbsp Vegetable Oil
  • 1 cup lite creme
  • 1/2 cup ketchup (or more to taste)
  • salt & pepper to taste
  • dash of hot sauce (any red hot sauce)
  • 1 tsp cumin seeds
  • 2 tsp curry powder (garam masala)
  • Vegetables
  • 1 lb String beans
  • 2 Potatoes
  • 2 Onions
  • 2 scallion
  • 2 carrots
  • 1 garlic
  • 2 tomatoes pureed
  • 1/2 lb sweet corn (frozen)
  • 5-6 strands of Cilantro (or coriander)

Directions
  1. Preparation:
  2. Cut potatoes into small 1/2 Inch cubes. Boil them until 75% done.
  3. Dice onions.
  4. Boil carrots, corn, string beans together or separately.
  5. Puree tomatoes and blend them.
  6. Chop garlic, scallions (whites and greens separately).
  7. Cooking: (Medium to high heat)
  8. In a medium sized skillet, heat up the oil till its hot.
  9. Add cumin seeds and let it sizzle.
  10. Add garlic, saute till golden and sizzling.
  11. Add onions and saute them till transparent (or cooked).
  12. Add potatoes, saute it for 2-3 minutes.
  13. Add all the boiled vegetables.
  14. Cover and cook for 10 minutes.
  15. Add scallion (whites), tomato puree, curry powder, hot sauce, salt, pepper, ketchup and cover and cook for another 5 minutes.
  16. Add creme and cook for another 2 minutes on high. Cover and let it sit on stove for 10 minutes.
  17. Sprinkle the finely chopped coriander and scallion (greens) and serve!
  18. Have fun!
  19. (Best when served with Naan or Basmati rice)
