This is so quick and easy, and great if you love potatoes.

Ingredients
  • 5 large potatoes(cooked & diced into 1/2 inch cubes)
  • 2 eggs,hardboiled
  • 1/4 cup green onions
  • 1/4 cup parsley
  • 1/4 cup fresh mint
  • 1/4 cup olive oil
  • 2 cloves of garlic
  • 1/4 cup lemon juice
  • salt & pepper to taste

Directions
  1. Place the finely chopped first six ingredients in a large salad bowl.
  2. In a separate bowl,mash the garlic with the salt.
  3. Add lemon juice,oil,salt & pepper and stir.
  4. Add the dressing to the rest of the ingredients and toss gently,being careful not to crumble the potatoes and the eggs.
  5. Serve chilled.
