Veggie Stir Fry With Squash Recipe
My roommate made this for me the other night and I had to share the recipe.

Ingredients
  • 1 walnut squash
  • 1-2 cloves of garlic
  • 1 tbs ginger
  • 2 tbs sesame seed oil
  • soy sauce
  • 1/2 package of tofu
  • any veggie you have on hand that you want to stir fry

Directions
  1. Preheat oven to 400 degrees
  2. Cut the squash into half, clean out seeds. Place face down in a shallow baking dish with an inch of water
  3. Place in oven for 45 minutes
  4. Heat sauce pan over medium heat.
  5. Add sesame seed oil, grated ginger and minced garlic
  6. Add all your veggie and tofu after cutting them into fine stir frying material
  7. Splash in some soy sauce
  8. When every thing is cooked, serve the veggies inside the squash.

This sounds great!!!! I have a son who is a vegetarian and is coming home this weekend from college I a going to make this for him.
