A somewhat lowfat, raw, cold/room temperature soup chock-full-of-veggies. Reminiscent of guacamole with a very green/fresh flavor.

Ingredients
  • Avocado (also good for a ripe Florida avocado)
  • Celery
  • Onion
  • Bell Peppers
  • Jalapenos
  • Lemon juice
  • Lime Juice
  • Salt
  • Tomato
  • Water
  • Vegetarian Better than Bouillon "chicken" flavor (certified vegan)

Directions
  1. Blend water, "chicken buillon" Celery, Avocado in a Vitamixer, or with a handheld electric shake blender (careful with this, it's messy)
  2. Add in the other veggies, diced, and salt and lime/lemon juices.
  3. For extra heat, blend a jalapeno or two with the celery before adding the diced veggies.
  4. This is all to-taste preference, so add the the flavors to taste.
  5. I make a lot, so it serves about 5 bowls
  6. You can sub the Celery for Cucumber.
