How to make it

  • Heat olive oil in Dutch oven over high heat.
  • Coat beef lightly with flour and fry in batches until well browned on all sides.
  • Transfer beef to a plate and fry onions in the same pot until browned about 15 minutes.
  • Add celery and carrots during last 5 minutes.
  • Return beef and any accumulated juices to pot.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer covered for 3 hours.
