Lemon and Mustard Calamari

- 1 tablespoon olive oil shopping list
- 1 small (80g) white onion, chopped finely shopping list
- 3 cloves garlic, crushed shopping list
- 4 green onions, chopped shopping list
- 4 cups cooked calrose rice shopping list
- ¾ cup coarsely grated parmesan cheese shopping list
- 1 small egg, beaten lightly shopping list
- 2 tablespoons mild English mustard shopping list
- 6 medium (960g) calamari hoods shopping list

- (Double the quantity for 4 people) shopping list
- 1/3 cup olive oil shopping list
- 2 cloves garlic, crushed shopping list
- 2 tablespoons lemon juice shopping list
- 2 teaspoons mild English mustard shopping list
- ½ teaspoon sugar shopping list
How to make it
- Heat oil in pan; cook white onion and garlic, stirring, until onion is soft. Add green onion; cook, stirring, until just soft. Combine rice, onion mixture, cheese, rind, egg and mustard in large bowl.
- (Can be made ahead to this stage. Cover, refrigerate overnight.)
- Stuff the calamari hoods and hold together with toothpicks.
- Cook on BBQ until tender. Serve with the dressing and tossed salad.
