How to make it

  • Heat oven to 375 degrees
  • Melt butter in large skillet over medium heat
  • Add onions cook and stir until crispy tender
  • Add spinach and cook about 1 minute until heated through
  • Remove from heat and stir in the cottage cheese, sour cream and half of the mexican cheese blend
  • Spoon about 1/4 cup of filling down center of each tortilla and roll up
  • Place seam side down in a ungreased 13 by 9 glass baking dish
  • Pour enchilada sauce evenly over tortillas
  • Sprinkle remaining cheese blend evenly over top
  • Bake for 15 to 20 minutes until hot and bubbly.
