Ingredients
  • 1 tablespoon butter or margarine
  • 1/2 cup sliced green onions
  • 1 9 oz package frozen spinach, thawed and well drained
  • 1 cup small curd cottage cheese or ricotta cheese
  • 1/2 cup sour cream
  • 8 oz mexican blend cheeses
  • 12 6 inch corn tortillas warmed
  • 1 10 oz can of enchilada sauce

Directions
  1. Heat oven to 375 degrees
  2. Melt butter in large skillet over medium heat
  3. Add onions cook and stir until crispy tender
  4. Add spinach and cook about 1 minute until heated through
  5. Remove from heat and stir in the cottage cheese, sour cream and half of the mexican cheese blend
  6. Spoon about 1/4 cup of filling down center of each tortilla and roll up
  7. Place seam side down in a ungreased 13 by 9 glass baking dish
  8. Pour enchilada sauce evenly over tortillas
  9. Sprinkle remaining cheese blend evenly over top
  10. Bake for 15 to 20 minutes until hot and bubbly.
