Meatless Enchiladas

- 1 tablespoon butter or margarine shopping list
- 1/2 cup sliced green onions shopping list
- 1 9 oz package frozen spinach, thawed and well drained shopping list
- 1 cup small curd cottage cheese or ricotta cheese shopping list
- 1/2 cup sour cream shopping list
- 8 oz Mexican blend cheeses shopping list
- 12 6 inch corn tortillas warmed shopping list
- 1 10 oz can of enchilada sauce shopping list
How to make it
- Heat oven to 375 degrees
- Melt butter in large skillet over medium heat
- Add onions cook and stir until crispy tender
- Add spinach and cook about 1 minute until heated through
- Remove from heat and stir in the cottage cheese, sour cream and half of the mexican cheese blend
- Spoon about 1/4 cup of filling down center of each tortilla and roll up
- Place seam side down in a ungreased 13 by 9 glass baking dish
- Pour enchilada sauce evenly over tortillas
- Sprinkle remaining cheese blend evenly over top
- Bake for 15 to 20 minutes until hot and bubbly.
