Rosemary Bell Pepper Chicken Recipe
Another estate sale purchased recipe that is tried and true. I love this recipe but what is not to love about it? Peppers, herbs, chicken. Yummo. Enjoy

Ingredients
  • 2 large red bell peppers quartered and seeded
  • 1/2 teaspoon fresh rosemary leaves
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 chicken breasts halved
  • 1 teaspoon fresh rosemary leaves
  • 4 cloves garlic halved

Directions
  1. Preheat oven to 450.
  2. Place peppers into a rectangular baking dish.
  3. Sprinkle with 1/2 teaspoon fresh rosemary, salt and black pepper.
  4. Roast 20 minutes stirring once.
  5. Sprinkle chicken breast halves with salt, pepper and fresh rosemary.
  6. Remove peppers from oven.
  7. Stir and tuck chicken and garlic between pepper pieces.
  8. Reduce oven 400.
  9. Roast turning chicken rearranging peppers and garlic twice for 40 minutes.
