How to make it

  • Cook udon noodles according to package directions (approx 6 minutes)
  • drain and set aside
  • heat a bit of peanut oil in a skillet on the stove, medium high heat
  • add frozen broccoli and carrots, cook for about 5 minutes (until thawed) stirring frequently
  • add the red bell pepper chunks and cocktail onions
  • add a splash of cider vinegar, a splash of soy sauce, and the seasoning packet, stir well
  • cook until all ingredients are tender and beginning to brown (approx 5 - 10 more minutes, depending)
  • serve veggie mixture on top of udon noodles, with more soy sauce to taste
