Ingredients
  • Udon noodles
  • 1/2 red bell pepper, chopped into bitesize chunks
  • 1/2 bag frozen broccoli bits
  • 1/2 bag crinkle cut carrots
  • 1/2 jar cocktail onions, drained
  • 1 packet japanese, thai, or generally asian seasoning
  • apple cider vinegar
  • soy sauce
  • peanut oil

Directions
  1. Cook udon noodles according to package directions (approx 6 minutes)
  2. drain and set aside
  3. heat a bit of peanut oil in a skillet on the stove, medium high heat
  4. add frozen broccoli and carrots, cook for about 5 minutes (until thawed) stirring frequently
  5. add the red bell pepper chunks and cocktail onions
  6. add a splash of cider vinegar, a splash of soy sauce, and the seasoning packet, stir well
  7. cook until all ingredients are tender and beginning to brown (approx 5 - 10 more minutes, depending)
  8. serve veggie mixture on top of udon noodles, with more soy sauce to taste
