Ingredients
  • 4 thick slices of good quality lamb's liver
  • 4 lean back rashers
  • 2 small shallots
  • 1 16 oz can of chopped tomatoes
  • Half cup brown bread crumbs
  • Half cup grated cheddar cheese
  • Little extra virgin olive oil for greasing dish.

Directions
  1. Heat oven to 180
  2. Grease an ovenproof dish with the olive oil.
  3. Chop shallots and sprinkle around bottom of dish
  4. Arrange liver and bacon neatly on top
  5. Cover with tinned tomatoes (juice and all)
  6. Sprinkle with bread crumbs and cheese.
  7. Cover and cook in a hot oven for 45 mins then remove lid and continue cooking for a further 15 mins
  8. Serve with baked poratoe.
