Tasty Liver and Bacon

- 4 thick slices of good quality lamb's liver shopping list
- 4 lean back rashers shopping list
- 2 small shallots shopping list
- 1 16 oz can of chopped tomatoes shopping list
- Half cup brown bread crumbs shopping list
- Half cup grated cheddar cheese shopping list
- Little extra virgin olive oil for greasing dish. shopping list
How to make it
- Heat oven to 180
- Grease an ovenproof dish with the olive oil.
- Chop shallots and sprinkle around bottom of dish
- Arrange liver and bacon neatly on top
- Cover with tinned tomatoes (juice and all)
- Sprinkle with bread crumbs and cheese.
- Cover and cook in a hot oven for 45 mins then remove lid and continue cooking for a further 15 mins
- Serve with baked poratoe.
