Cranberry Strata Recipe
Very delightful dessert that could also be used at a nice brunch. A lot of great flavors going on here.

Ingredients
  • 12 cups day old Italian bread cubes
  • 8 ounces cream cheese softened
  • 1/2 cup sugar divided
  • 1/2 teaspoon almond extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 4 eggs
  • 1-1/2 cup half and half
  • 1 teaspoon cinnamon
  • 14 ounce can sour cherries chopped
  • 1 cup sugar
  • 1 cup corn syrup
  • 1/2 teaspoon almond extract

Directions
  1. Preheat oven to 350.
  2. Place 8 cups of the bread cubes in prepared pan.
  3. In mixing bowl beat cream cheese, 1/4 cup sugar and extract until smooth.
  4. Stir in pecans and cranberries.
  5. Spoon over bread and top with remaining bread cubes.
  6. In mixing bowl whisk eggs, cream, cinnamon and remaining sugar.
  7. Pour over bread and bake uncovered for 40 minutes.
  8. Let stand 5 minutes before serving.
  9. Top with cherry syrup.
  10. To make cherry syrup combine cherries, sugar and corn syrup in small saucepan then bring to a boil.
  11. Reduce heat and simmer 15 minutes.
  12. Remove from heat and stir in extract. Serve warm over strata.
