tomatoes and mangos with basil vinaigrette

- basil vinaigrette: shopping list
- 1 french shallot shopping list
- 1/4 cup sherry wine vinegar shopping list
- 1 teaspoon Dijon mustard shopping list
- salt and pepper to taste shopping list
- 3/4 to 1 cup good Olive oil' shopping list
- handful of fresh basil shopping list
- 2 ripe mangos shopping list
- 2 ripe tomatoes (tr y for same size as mango) shopping list
- shredded basil leaves for garnish shopping list
How to make it
- combine shallot, vinegar, salt pepper and mustard in processor or blender. slowly add the olive oil with machine runnning. add basil leaves. reserve dressing.
- peel and slice mangos into 6 slices each (3 from each side of pit)
- slice tomatoes
- top each mango slice with a tomatoe slice
- overlap on a serving platter
- drizzle with vinaigrette
- garnish with shredded basil.
