How to make it

  • combine shallot, vinegar, salt pepper and mustard in processor or blender. slowly add the olive oil with machine runnning. add basil leaves. reserve dressing.
  • peel and slice mangos into 6 slices each (3 from each side of pit)
  • slice tomatoes
  • top each mango slice with a tomatoe slice
  • overlap on a serving platter
  • drizzle with vinaigrette
  • garnish with shredded basil.
