Chocolate Lime Dessert

- 1 package Christie's chocolate wafers shopping list
- 5 tbsp melted butter shopping list
- 1 pkg lime jello (large size) shopping list
- 1 c hot water shopping list
- 1/4 c lemon juice shopping list
- 2 tsp grated lemon rind shopping list
- 1/2 c sugar shopping list
- 1 tsp plain gelatin melted into a little cold water shopping list
- 1 large can evaporated milk (not fat free), well chilled shopping list
- few drops green food colouring (optional) shopping list
- 1/2 c semisweet chocolate chips shopping list
- 2 tsp shortening shopping list
How to make it
- Reserve enough whole wafers to go around the edge of a 9x13 baking pan.
- Crush the rest of the wafers and mix with the melted butter and pat into pan.
- Stand the whole wafers upright around the edges of the baking pan.
- Dissolve the lime jello in the hot water and add the lemon juice, lemon rind, plain gelatin, and sugar. Let this partly set in the fridge then remove from fridge and beat with an electric beater until creamy.
- In another bowl, beat the evaporated milk until double in bulk.
- Add the jelly mixture and colouring (if using) then pour into pan, taking care to not knock over the upright wafers. Refrigerate for about an hour.
- Melt chocolate and shortening together, then drizzle over the dessert decoratively.
- Return to the refrigerator and leave to set overnight.
