Ingredients
  • 26 ounce jar meatless spaghetti sauce
  • 1/2 cup red wine
  • 1/2 teaspoon chili powder
  • 3 skinless boneless chicken breasts cut into strips
  • 7 ounces whole kernel sweet corn
  • 8 ounces whole olives
  • 1/2 teaspoon cumin

Directions
  1. Pour spaghetti sauce into a 6 cup microwave safe casserole dish.
  2. In a plastic bag place several tablespoons of flour.
  3. Place chicken strips in bag and shake until chicken is well covered with flour.
  4. Shake off any excess flour from chicken.
  5. Heat a frying pan to medium.
  6. Place a small amount of oil in the pan then lightly brown chicken on both sides.
  7. While chicken is browning add chili and wine to sauce.
  8. Microwave on high for 7 minutes.
  9. Remove chicken from frying pan and add to warm sauce.
  10. Return to microwave and cook on high for 17 minutes.
  11. Remove dish from microwave then add corn and olives.
  12. Return to oven for 5 minutes or until warm enough to serve.
  13. Add cumin just before serving.
