Chicken Mexicana

- 26 ounce jar meatless spaghetti sauce shopping list
- 1/2 cup red wine shopping list
- 1/2 teaspoon chili powder shopping list
- 3 skinless boneless chicken breasts cut into strips shopping list
- 7 ounces whole kernel sweet corn shopping list
- 8 ounces whole olives shopping list
- 1/2 teaspoon cumin shopping list
How to make it
- Pour spaghetti sauce into a 6 cup microwave safe casserole dish.
- In a plastic bag place several tablespoons of flour.
- Place chicken strips in bag and shake until chicken is well covered with flour.
- Shake off any excess flour from chicken.
- Heat a frying pan to medium.
- Place a small amount of oil in the pan then lightly brown chicken on both sides.
- While chicken is browning add chili and wine to sauce.
- Microwave on high for 7 minutes.
- Remove chicken from frying pan and add to warm sauce.
- Return to microwave and cook on high for 17 minutes.
- Remove dish from microwave then add corn and olives.
- Return to oven for 5 minutes or until warm enough to serve.
- Add cumin just before serving.
