How to make it
- Wash & peel potato & kumera.
- Slice potato and kumara into thin slices (not quite as thin as potato crisps)
- Line roasting dish (I use 24cm x 20cm) with a layer of potato and then a layer of kumera.
- Pour cheese sauce thinly over potato/kumera (doesn't matter if not completely covering)
- Next apply layer of sauerkraut . Might require your fingers to pull this apart so it spreads evenly.
- Drizzle tomato sauce over sauerkraut - don't dump it on, but enable enough for flavour as this gives the dish the sweet tang and takes the edge off the sauerkraut.
- Top off with grated cheese - spread evenly to ensure a nice sticky mess when baked.
- Sprinkle cracked pepper or other seasoning if desired.
- Bake in regular oven for approximately 60 minutes at around 180 degrees celcius
