Banana Cake Recipe
An allergy-safe recipe that is terrific for brunch (or a great dessert with a glaze added).

Ingredients
  • 2 cups flour
  • 3/4 cup brown sugar, firmly packed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp. salt
  • 1-3/4 cups ripe banana, mashed (3-4 medium bananas)
  • 1/2 cup oil

Directions
  1. Preheat oven to 350 degrees F. Coat Bundt pan with oil/flour spray (or grease/flour pan) and set aside. In a large bowl, combine banana and oil. Mix well. Add dry ingredients, stirring just until moistened. Spoon batter into prepared pan.
  2. Bake 45-50 minutes or until a cake tester inserted in center comes out clean. Cool in pan 10 minutes, then remove and cool completely on a wire rack.
  3. I drizzled on a glaze of powdered sugar and rice milk. The recipe says you can also use a chocolate glaze, which sounds yummy (or maybe add some safe chocolate chips to the batter?).
