How to make it

  • Preheat oven to 350 degrees F. Coat Bundt pan with oil/flour spray (or grease/flour pan) and set aside. In a large bowl, combine banana and oil. Mix well. Add dry ingredients, stirring just until moistened. Spoon batter into prepared pan.
  • Bake 45-50 minutes or until a cake tester inserted in center comes out clean. Cool in pan 10 minutes, then remove and cool completely on a wire rack.
  • I drizzled on a glaze of powdered sugar and rice milk. The recipe says you can also use a chocolate glaze, which sounds yummy (or maybe add some safe chocolate chips to the batter?).
