How to make it

  • Cook ground beef; drain fat. Stir in tomato sauce, tomato paste, garlic powder, oregano, and salt to taste. Set aside to cool.
  • Make biscuit dough: Stir together dry ingredients, and cut in shortening (I use my hands to do this, rubbing the ingredients together with my fingers until the shortening is well blended with the dry ingredients - it's easier than it sounds!). Add water or milk and stir until dough clings together (add a little bit more liquid if the dough is looking too dry).
  • Turn dough out onto parchment paper or waxed paper sprinkled with a little flour, and knead it a few times. Pat or roll out to a large rectangle, about 1/2" thick.
  • Spread meat mixture out onto dough, leaving about 1" uncovered at the top long side of the rectangle. Roll dough up from the bottom, picking up the parchment or waxed paper to help pull the dough over on top of the meat mixture. Cut into slices about 1" thick (use a serrated knife or this won't work!) and place the slices on a lightly oiled baking sheet (or cover baking sheet with some parchment paper).
  • Sprinkle with mozzarella cheese if desired.
  • Bake at 450 degrees for 10-12 minutes, or until dough and cheese are lightly browned.
