  • Apple-Mango Chutney Diabetic

  • 1 tbsp vegetable oil
  • 2 tbsp finely chopped onion
  • 1 tbsp grated fresh gingerroot
  • 1 apple, peeled, cored, and diced
  • 1 ripe mango, peeled, pitted and diced
  • 1/4 c apple juice
  • 1 tbsp finely chopped fresh cilantro

Directions
  1. Place oil in saucepan over high heat. Add onion and ginger. Saute
  2. until softened, 2 to 3 minutes. Stir in apple, mango and apple juice. Saute
  3. 3 minutes till fruit is soft. Pour into bowl. Cool. Fold in cilantro. Serve
  4. with Spice-Rubbed Pork Chops (see above).
  5. Makes about 4 Servings (1/2 c, as relish with meat dishes).
