Ingredients
  • 16 red skin potatoes-washed and dried
  • 1 Spanish onion-sliced-1/4 inch thick
  • Salt and pepper to taste
  • 4 Tablespoons butter
  • 4 Tablespoons olive oil
  • 4 8-inch long pieces of foil

Directions
  1. Slice 4-potatoes and place on an oiled sheet of foil along with 1/4 of the onions and season with salt and pepper
  2. Add 1 T. butter and sprinkle with some oil.
  3. Wrap tightly-allowing for some room to lightly steam and crisp.
  4. Place on at the same time as the grouper. Turn frequently to allow the butter and oil to mix with the potatoes and onions.
