Grilled Potato Papillote

- 16 red skin potatoes-washed and dried shopping list
- 1 spanish onion-sliced-1/4 inch thick shopping list
- salt and pepper to taste shopping list
- 4 Tablespoons butter shopping list
- 4 Tablespoons olive oil shopping list
- 4 8-inch long pieces of foil shopping list
How to make it
- Slice 4-potatoes and place on an oiled sheet of foil along with 1/4 of the onions and season with salt and pepper
- Add 1 T. butter and sprinkle with some oil.
- Wrap tightly-allowing for some room to lightly steam and crisp.
- Place on at the same time as the grouper. Turn frequently to allow the butter and oil to mix with the potatoes and onions.
