Taste of Italy Veggie Sandwich

- 6 ounces pitted black olives, finely chopped shopping list
- 1-1/2 cups roasted red peppers, chopped shopping list
- 2 tomatoes; peeled, seeded and chopped shopping list
- 3 scallions, chopped shopping list
- 2 garlic cloves, mashed shopping list
- 3 teaspoons extra virgin olive oil shopping list
- 2 teaspoons red wine vinegar or balsamic vinegar shopping list
- salt and pepper to taste shopping list
- mozzarella cheese, 4 1/2-inch slices shopping list
How to make it
- In a small bowl, whisk together olive oil, vinegar, garlic, scallions salt and pepper. Whisk well.
- In a separate bowl, add olives, roasted peppers, and tomatoes. Toss to combine.
- Pour dressing over vegetables and toss to coat.
- Cover and refrigerate 1-2 hours for best flavor.
- Serve on rustic bread with 2 slices of mozzarella cheese.
