Tangy Cherry Relish Recipe
A nice relish to serve with poultry or pork. Also nice to give as a gift at the holidays.

Ingredients
  • 1 cup cherry preserves
  • 1 cup dried cherries
  • 2 tablespoons cider vinegar
  • 1/2 cup onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1/4 cup carrot, peeled and finely shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil

Directions
  1. Chop preserves. Transfer to saucepan.
  2. Add dried cherries (I chop these a little bit too) and vinegar.
  3. Bring to a boil.
  4. Add onion, green pepper and carrot.
  5. Reduce heat and simmer 5 minutes.
  6. Remove from heat.
  7. Stir in salt and basil.
  8. Cover and chill overnight.
  9. This makes 2 cups of relish.
